Using Ubuntu 18.04, unstable padoka ppa, kernel 4.18.5-041805-generic, RX 56 I experience GPU hangs when playing Doom via Proton for about 30m when using gnome desktop, seems to last longer when using xfce desktop.

People have mentioned that they were having similar problems when the overlay was disabled; is your overlay disabled?

Overlay is enabled, flickers when using gnome DE, have since switched to XFCE and GPU freezes are very rare now, finished the campaign with maybe 1 freeze in 10h of playtime.
