Hello @ExplosiveSilo, it may be worthwhile to also check the behavior with nvidia 415.27.
I updated to 415.27 and still have the same issue. I also forgot to note that I did boot the kernel with 'acpi=ht' to rule out ACPI issues. Here's a stacktrace of the kernel during the freeze: https://gist.github.com/ExplosiveSilo/77168946f7af6d3c795cc90394540438
Game crashes after opening cutscene.
Start a new game in Story Mode, either watch or skip the opening cutscene.
Hello @SeraphisCain, these look like some lines of interest from the log:
INFO: Assertion failed: 0 && "Unsupported format tag!"
INFO: Assertion failed: (voice->src.gstreamer != NULL && pBufferWMA != NULL) || (voice->src.gstreamer == NULL && pBufferWMA == NULL)
I was able to fix the problem with protontweaks xact and manually adding xaudio2_6 and xaudio2_7 overrides in winecfg.
Works playably with Proton 7.0 and Mesa 21.3.5
There are some glitches like quitting to title seems to hang on loading.
Edit: that hang might have been just a random occurrence since another time it works fine after playing.
Proton 8.0-5 version works, stable 60 fps but there is keyboard input lag constantly.

System Information
I confirm:
steam-265550.log
Symptoms
After playing for a few minutes to half an hour the game freezes X with only momentary updates to the screen every minute or so. The only way to get back to a functioning desktop is to press alt+sysrq+k and restart X.
Extra software versions tested:

Reproduction
Start Dead Rising 3, go to chapter 2 and start at the mechanic base. Create a lot of havoc on screen to stress the system by killing a lot of zombies using the steamroller.
