For me it usually takes a few hours to crash and always crashes on a loading screen. Is it the same for you, always on a loading screen?

It may be the kernel version causing trouble for you as I'm running 4.19.20
I played through all of Dark Souls 3, killed every boss including DLC on Linux.
I experienced occasional random crashes that could happen anywhere. I could usually have the game running several hours without a crash though.
Wasn't really a big issue to me. It didn't stop me from playing, the autosave is triggered fairly often. Apparently even people on Windows have occasional crashing problems too.
Using Intel/RX580 on Arch, with mesa/llvm from Arch repos.
I haven't had single crash with r9 390 and I've been running the game for hours.
If you are using ESYNC which is on by default make sure you have read https://github.com/ValveSoftware/Proton/wiki/Requirements#fd-limit-requirements-systemd--240
Other than that, it might be nvidia specific issue.
It seems very random, I've been able to play for several hours without any crashes. I've also, as I mentioned, had it crash 5 minutes in. The included Proton.log was from one such instance.
It may be faulty hardware on my end, though I haven't experienced this behaviour with any other game. The closest was Fallout 4 which had random freezes, but after installing the DLL version of FAudio (as suggested on ProtonDB) even those have gone away. Which, in turn, leaves Dark Souls 3 and the random factor in crashing to desktop unexplained.
Have you tried without DXVK (PROTON_USE_WINED3D=1 %command)? If it works with wined3d, It may be unstable vulkan implementation in the nvidia driver (or unlikely a nvidia specific bug in dxvk).
For me, game crash exactly 1 time for like 500 hours of play.
32GB of RAM with enhanced stability settings in BIOS. Also all possible things is set to default or to most stable option possible. Only problem is the sound for me. It get distorted after like 2-3 hours of play. Need restart game to fix it and play more 2-3 hours and so on...

I used to have that sound problem with other games and the solution was to put WINEDLLOVERRIDES="xaudio2_7=n,b" %command% in the game launch options.

That was ABSOLUTELY RIGHT! It fixes new game cinematic dialogue speak with 5.1 sound configuration! Thank you! I was looking for this so much much time..

Symptoms
Game crashes after a few minutes of play. There is not one specific thing which triggers it.
It also doesn't seem to happen after a specific amount of time. I've seen it happen after 5 minutes and also after 40 minutes.
