Possible regression since Proton 3.7-8 but then again they always offer 3.7-8 (unless one day they don't).
Further context is that I went from latest Proton through each and only Proton 3.7-8 starts the game. I did not look at the logs as the OP can do the rest. But, I would just play it using 3.7-8 as long as that works.
The game needs directmusic to play music. Either install it with winetricks or set musicEnabled=0 in the ini file.
I disabled musicEnabled=0, and the game starts now. Thanks @DadSchoorse
Some good news. Music bug is fixed in Wine 4.21+, so whenever valve updates Proton to meet the latest Wine release, this bug will be fixed.

Some more things. I decided to go with the D3D11 mod for Gothic and Gothic II, so no more messing around with wrappers. Just waiting on Proton getting updated to 4.21+!

Crash after intro movies play.
Setting "musicEnabled=0" in the "Gothic/System/Gothic.ini" file will remedy the issue for now.
