I tried running Maize using Proton and it just crashes a second after launching. The Steam AppID of the game is 284240. I added PROTON_LOG=1 %command% to the game's launch and got the following log:

I have checked whether there are updates for my system available and I am up to date

Proton 5.0.3 seems to have solved the issue as it is launching now.
