Game runs and plays just fine when installing d3dcompiler_47 with "protontricks 1206430 d3dcompiler_47" and using GE-Proton7-10. Trying Proton Experimental and Proton 7.0 will crash the game when pressing start in the main menu as described by OP.

The Unfinished Swan gets stuck whenever the book section is displayed

The book animates and opens but you can see that it gets inverted before it opens. Then the game is just stuck in that screen. Audio still plays but any input won't do anything. Only way to exit is to force exit the game via menu.
This issue happens in Proton 10 and above. By forcing Proton 9 or below, the game works totally fine.
@kugiigi This ended up being 2 different regressions after I tested various builds. 1 for the book inverting and another for the failure to play after the book opens. We are investigating both issues, thank you for the report!

Symptoms
When I start the game, it opens into a white screen with a swan feet as a cursor, and the closes, is not possible to start playing the game.
There is a way to get to the main menu, that is installing d3dcompiler_47 with winetricks. That allow to continue to the opening titles, and the main menu, but pressing "play" crashes the game. This are the logs with this method: steam-1206430.log.
Reproduction
Just open the game and watch it close.
