That's pretty much what I figured. When I can finally get to a TTY, the memory usage of the graphics card has dropped to 8 MiB. That combined with low temps and low CPU, RAM, GPU, and vRAM usage during gameplay would suggest the card itself crashed.
It might be worthwhile to also mention your findings to your video driver vendor.
How do I do that?
So I realized I could use Steam's new recording feature to at least record the game until it crashes. So I did and it worked. And here it is. I have no idea if this will help, but maybe? It's at least proof of the crash.

The crash corrupted the footage Steam recorded and made it so I can't edit it. No matter what I did, I couldn't export any clip of that video, including earlier segments in the video before the crash.
HOWEVER, I can still watch the video in Steam's player. So I had the big brained idea of using OBS to record Steam's recording being played back in Steam's player.
And that's why you can see Steam's player in this video. That's also why this video is only of the last couple minutes of the recording. Because otherwise I would have to sit there doing nothing for all 25 minutes of recorded gameplay while I wait for OBS to record it all in real time.
Would need someone to confirm for Steam Deck, but as for me since todays update the "Co-op Multiplayer" cause system wide crash. Looking at ressource usage while pressing play i noticed the system memory going to 99% then crashing my system.
Can't test on Windows and haven't seen similar report for it so far.

Fix was to use Launch:
SteamDeck=0 %command%
and using Proton 9
@a3d0n no issues on my end with experimental, 9070 mesa 26.0.2 and link 6.19.8. Game uses between 1-1.2 GB of VRAM and around 1.3 GB of RAM. How long does it take for it to crash on your end? have you tried wiping the prefix and eeing if the issue still happens? and SteamDeck=0 shouldn't do anything when you aren't playing on steam deck

Symptoms
The game keeps crashing my entire computer. It's not a crash-to-desktop bug. It's a crashes-desktop bug. The only option is a reboot. I can't even get to a TTY, unless I wait a few minutes for whatever it is to finally stop crashing. If I let it go on long enough, I can get a TTY again, but it's faster to just press the power button on my tower.
I don't know what triggers it. It seems to happen completely randomly. I was watching temperatures, and CPU, RAM, GPU, and graphics card memory usage for spikes while playing, but everything always looks fine.
There doesn't seem to be any one thing in the game that triggers it, either. It would make sense if it happens while I'm in the middle of crazy gameplay or if certain enemies do certain attacks or something. But most of the time it doesn't. The bug is usually triggered when I'm just standing still and looking around the room or something. But that could be because I spend much more time hunting secrets and gold than fighting. Combat is usually over pretty quickly.
Reproduction
I literally don't know. I've found other people saying they're having the same/similar problem, but it looks like it's just random unluck for who gets affected by this. Honestly, I'm not even sure if this is a Proton issue. Those other people didn't really say if they were using Proton or not. But the dev is trying to say it's Proton so here we are.
