For the record, everything I am using is official. It's regular Proton 10.0-3 stable. It's SteamVR stable 2.14.4 with Steam Link. On the Meta Quest 3 I am using the official Steam Link application.
The mentions of the unofficial applications are just for comparison. I made sure to not let any trace of their installation or files interfere with the tests with official versions.
I don't understand why the bug report was tagged as unofficial, @kisak-valve
I've brought SteamVR back to previous version - 2.12.14 and Demeo now starts and works normally. So it seems to be a regression from SteamVR.

When called from SteamVR, the game shows a black screen (indicating it started and initialized VR) but hangs there. Nothing appears and the game has to be killed.
This is when being streamed via the officially supported Steam Link.
Also, and I know it's unsupported but it can work as a comparison: if the streaming is done by WiVRn + xrizer (openvr->openxr translator), xrizer crashes at the start and the game exits. I can get a log when this happens if needed.
Reproduction
Either press "PLAY" when in SteamVR or, with SteamVR running, press "PLAY" on the flatscreen and select the SteamVR option.
