On steam deck (stable client, beta OS)
Selection menu doesn't contain any blank or "default" entry.

How to return to the original behavior before this menu was accessed? (Which is I guess to use the latest approved proton version for each game?)

Thanks.

Hello @ohmygodie, with Steam on SteamOS, if the Force the use of a specific Steam Play compatibility tool checkbox is unchecked in a game's per-game properties, then the Steam Deck Verified compatibility tool will be used with that game.

In your Steam library, you can see what compatibility tool is used and why by selecting a game, going to the game info tab, and scrolling down a bit to the line under the Steam Deck Compatibility rating.

Thanks for replying @kisak-valve
I was asking about the global setting found in "settings/compatibility'' in the desktop-mode client, or in the developer settings in the deck UI.
Doesn't this apply even if the per-game setting is left unchecked?

That's user preference and would only apply to Windows based games that have not been through the Steam Deck Verification process. There shouldn't be a non-user selected "default" for that.

Ok ! thanks for the additional info.
(maybe this should be exposed somewhere)
