Add default Proton option for steam games

Wine/Proton have gotten so good that tinkering is very rarely required. A lot of the times, Wine/Proton even works better than the native Linux version.

However, if you want to use Proton for a game that has a native Linux port, you have to choose a specific Proton version (e.g., Proton 10 beta, Proton Experimental, etc.), which can be daunting for new users, and also makes it harder to change your "default Proton" all at once through the Compatibility/Default compatibility tool option in steam.

I suggest providing an option in the compatibility section of a game like "Proton - Default", which just automatically uses the selected default compatibility tool in steam, fixing the above two problems. It would also be nice to have something showing the currently active compatibility tool (when "Force the use of a specific Steam Play compatibility tool" isn't checked, so you can clearly see if something is running under Proton or Native. You could then "reuse this" to clearly show which Proton version is in use when the user selected default Proton.
