Just adding some information - I've tested a few games, and sometimes you can force a higher resolution by changing it in the game after starting a stream. However, this requires fiddling with the enabling / disabling full screen or windowed mode. Although, with a game like "Hades 2" this is not an option (can't change to a resolution greater than 800p).
There should be a "Native" option for the Resolution Limit in Steam Deck Remote Play client options, so the requested stream resolution matches the in-use display.

Please describe your issue in as much detail as possible:
When connecting to a remote PC via Steam Remote Play, host streaming resolution is always capped at the Steam Deck's screen's native 800p resolution.
For example, If I connect an external display (in my case, my Xreal one pro glasses) which is 1080p, then select Remote play, instead of getting a 1080p stream I get an 800p stream.
Host setting "Change desktop resolution to match streaming client" is enabled.
Things I've tried:
Setting Settings -> Display -> Maximum Game Resolution to 1920x1080. (Also tried Native, and Default)
Setting game specific settings on the Steam deck - Game Resolution -> 1920x1080.
