I believe the same problem occurs in the game Journey, where players can randomly connect with one another during gameplay.
Leaving the Steam beta or launching the game in offline mode does, in fact, resolve the issue.
I also suspect that https://github.com/ValveSoftware/steam-for-linux/issues/12589 may be related.
I can confirm that, with the latest Steam beta update, encountering a companion in Journey no longer causes the client to crash.

I had problem connecting to lobbies in a game called Table top simulator with Beta client participation.
When I joined someone's lobby or someone tried to join to me, the game and the steam client crushed.
