Hey, just checking to see if anyone is on this, yet.
Day 2 of asking for help with this bug
I also had the same error using the Snap version on the Host. Removing and installing steam using the steam_latest.deb fixed the issue for me.

Yep, I gave up, and did the same thing.
Lost all my game saves, generally a pain in the butt. Had to re-learn how to install DLC packs, which took around 3 hours.
Can not reccomend switching from snap to deb.
Also cannot reccomend snap at all.
I also had this issue and found the same error in my logs for pipewire on Ubuntu latest, which led me to this issue. I was using the snap version of Steam, but after switching to the .deb package and reinstalling my games, streaming is working perfectly.
I did have to go through all the big picture setup again and re-download my games, but I wanted to play on my TV so that was necessary.
I'm having the same issue as well on Void Linux. In my case, it seems to stem from streaming audio from a host to a client, as enabling "Play audio on host" doesn't cause Steam to crash. Below is some additional information I found on my system that may be of use.
Kernel log:
steam[31058]: segfault at 28 ip ... in libpipewire-0.3.so.0.1607.0
The crash repeats consistently in:
libpipewire-0.3.so.0.1607.0
PipeWire status before crash:
PipeWire 1.6.7 running normally
WirePlumber 0.5.15 running
Pulse compatibility working:
Server Name: PulseAudio (on PipeWire 1.6.7)
PipeWire devices are visible and functional:
wpctl status shows audio devices, sinks, sources, and Steam client.
Nothing extracted yet.
Steam client version: 1.0.0.85
Distribution: Ubuntu
Opted into Steam client beta?: No
Have you checked for system updates?: Yes
Steam Logs: steam-logs.tar.gz
GPU: Nvidia GTX 980
