There's no sound in my postal 2 and tf2 games, after I removed pulseaudio. I think steam should learn somehow to detect audio device used in system by default

Sound support in games is the responsibility of the games. I think there might be existing issues open for SDL to auto-detect ALSA and that kind of thing.

I partly understand that, I just thought, that steam could force apps to use some sort of wrapper, like I manually force to run ut2004 through aoss

I've marked this as a feature request, although I think the chance we'll do this is low.

There is a workaround. Launch Steam with the enviroment variable SDL_AUDIODRIVER=alsa, and it works fine.

Thanks, worked fine.
However it's a little bit disappointing that there's still a need for workarounds like that, and it is not clear, whom to send bug reports
