Quicklists are rad and we all love them in docks like the Unity dock and others such as Plank, but it would appear that Steam doesn't take advantage of the quicklist functionality in the Gnome Shell dock, at least it doesn't in Gnome 3.10 in Arch Linux. Any chance we will be seeing this added? I suspect Valve isn't interested in supporting all the features in every DE ever made, but since gnome shell is included in SteamOS it would seem like a good idea.
