How did you attempt to resume play.... by alt-tabbing or clicking the icon?
initially I just attempted to click back on the game, which brought it to the forefront (shutter application disappeared behind it) but did not resume full-screen mode.
Then I attempted alt+tabbing to it. The alt+tab menu came up over the game OK and performed as expected, but upon selecting Killing Floor, it just brought it to the forefront but still in this odd windowed mode.
Then I moved the cursor over the icon and clicked it, with no response. Other programs responded to clicking the icon, but killing floor seemed to have no effect clicking its icon. Eventually, it froze completely and after the console finished its dump, both Killing Floor and Steam terminated.
I just re-created the issue again to analyze the behaviour a little further.
Items of Interest:
alt+tab does not work outright. From within Killing Floor, I have to first hit Alt, then I can alt+tab, or eventually the unity HUD will pop up over the game (from simply pressing Alt), performing more or less the same function as alt+tab (allowing me to access other programs while killing floor is running).
The means of interacting with the game in this state seem to differ based on the way I try to resume using it. The mouse will be heavily restricted to a small quadrant if I try to alt+tab back to it, and no OS cursor is present. The game cursor (white triangle) will move at a strange relativity to the OS cursor if I click the icon then move the mouse over the screen (os mouse moves a little, game cursor move a larger distance, always offset from the OS mouse except at the dead center of the screen where they both line up) and there is no restriction on how far the mouse can move in the game window in this state. if I simply click back to the game, the os mouse dissapears and the game cursor is restricted to a different boundary than when I alt+tab back to it.
This time, after clicking around, alt+tabbing, and clicking the cursor and getting the same results, suddenly the game re-appeared full-screen again. I assume I activated an in-game button as when it returned to full screen, it was now at the character select screen rather than the "ready" screen.
Attached is a screenshot of the Unity interface as it appears when "alt+tabbed" out of killing floor. it appears to put the game into a form of windowed mode.
I'm having a similar issue. My computer screen looks like aurikai's, but my games are still playable; I just can't get the game to go back to full screen after alt-tabbing.

UPDATE: Video demonstrating the behaviour. Also, I discovered that an "untitled window" icon in unity is the real KF icon and resumes full-screen mode. however the behavior exhibited by this game still needs to be addressed.

Description: While trying to screenshot another issue in Killing floor, I eventually attempted to alt+tab as the F12 button was not taking screenshots. After using Shutter to grab a shot of the game, I attempted to resume play only to find that the Ubuntu menus would not disappear and bring the game back to fullscreen. Mouse operations were heavily limited (to 1/4 the screen, as if an invisible barrier were preventing reaching the far right or bottom sections of the screen) and interaction with the ubuntu sidebar was still possible (mouse cursor would leave the game and operate on the visible portion of the underlying OS)
The game would still respond to mouseclicks in areas the mouse was capable of reaching. After a few minutes of clicking trying to get the game to go back to fullscreen, it froze completely.
Watching the console showed that it was performing a crashdump during this time. after that completed, killingfloor and steam both completely terminated.
Steps to reproduce: launch killing-floor (or other steam games presumably) and use alt+tab and interact with another program. Try to click back on killing floor (or other game) and see that functionality is limited and OS elements do not disappear.
