I think, it would be nice to have some steam mode for expert users, which will allow to install games for another platforms and, for example, setup commandline arguments like it is vavilable for native games.
For example:

  1. I enabling that mode (which is disabled by default, to not abuse dummy users)
  2. Open "all games" page in library.
  3. install other-platform game
  4. setup "wine %command%" as execution parameters in game preferences in library.
  5. run game
  6. Enjoy

(it also possible to setup wine as interpreter for PE files on kernel level, so it can even be unneeded to setup execution parameters).

P.S. Streaming from windows steam under wine - isn't a good idea, I bet.
