I just witnessed the same issue after playing music successfully for a good 20-30 minutes.
Three years later and I just experienced a very similar issue in rhythmbox. I believe the issue may be related to the library being used for audio playback (gstreamer I believe)
This problem occurs on "stable" Steam client as well (build 16.1.2022, 17:34:49). I was playing music, then played a game and after a while tried to play music but with the problem occurring: no sound, playback skips in increments of around 10s forward.
Playing music with another (non-Steam) application works so the audio device is working (Pipewire). Only the the player in Steam somehow loses audio output. Playing sound with (for example) aplay, paplay and pw-play works.
I think issue could be named more clearly: no sound and skipping playback. It is not "unstable" since it doesn't crash, it just doesn't produce output for some reason.
