I don't get a popup on start where Steam asks me which save file version I want to use.
All three systems tell me "Steam Cloud: up to date".
On Linux Desktop and Deck I see the following (0 bytes used):

I played the Wo Long: Fallen Dynasty Demo (2285240) on my Linux Desktop, on my Windows Desktop and on my Steam Deck.
All of them now have their own unique save, even though the game has Steam Cloud support: https://store.steampowered.com/account/remotestorageapp/?appid=1448440 (this is the appid of the full game which I do not own), but it is linked to the demo https://store.steampowered.com/account/remotestorageapp/?appid=2285240.
That makes sense since you can carry your save over to the full release.
