Problem

The Linux client window doesn't respond to Win + → or Win + ← in Gnome

You can do this with Ctrl + Win + ->.

Win + arrow is functionality provided by Windows, not by the Steam client. Linux window managers may offer something similar, as mentioned above, but there aren't any guarantees.
