Reverted to my old pulseaudio configuration, built scummvm from source (https://github.com/scummvm/scummvm/commit/b28ac82fcba4ff9aed2690428311166df4915d7e) with the mohawk engine enabled in linux, and executed the game folder in it. No audio issues. Hope this helps.
I feel this is a bit too confusing.
You reverted to an "old" pulseaudio config but is that the original (as it would be with a newly installed OS) or did you change it up previously and revert to that? It would somewhat skew this issue if its not the original.
Proton 3.16-6 already has an audio update as well but I didn't see that mentioned as being tried.
And there's too many things going on with reverting config, building from source, and enabling mohawk to know which one did the trick for you or it it was 2/3 or 3/3 needed.
I think its great that you posted what fixed it for you but it could help people more by narrowing things down better or be a bit void if pulseaudio was messed with previously.

After having done a little more research I think I see one of the things going on. ScummVM has to be specially compiled with Mohawk engine support (
./configure --enable-all-engines). It sounds like Cyan is using that combo as a compatibility layer. Not sure if scummvm for linux would have solved the audio issues but I have my suspicions.Reproduction
Start an Ubuntu 16.06 system.
Enable Steam Play for unapproved titles.
Open Riven.
Sound should be immediately crackly and poppy in the sound test.
